Ingredients: 1 lb fingerling potatoes, halved lengthwise. 2 tbsp olive oil. Salt and pepper to taste. For the sauce: 1/4 cup mayonnaise. 1 tbsp Dijon mustard. 1 tbsp honey. 1 tbsp apple cider vinegar. 2 cloves garlic, minced. Salt and pepper to taste. Chopped fresh parsley for garnish.
Instructions: Preheat oven to 425F 220C. In a bowl, toss halved fingerling potatoes with olive oil, salt, and pepper until evenly coated. Spread the potatoes on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until potatoes are tender and golden brown, stirring halfway through. While the potatoes are roasting, prepare the sauce by combining mayonnaise, Dijon mustard, honey, apple cider vinegar, minced garlic, salt, and pepper in a bowl. Mix well. Once the potatoes are done, remove them from the oven and transfer to a serving dish. Drizzle the craveable sauce over the roasted potatoes. Garnish with chopped fresh parsley before serving.
