This Roasted Radish Salad is delicious. It has roasted radishes, mixed greens, feta cheese, walnuts, and a tangy balsamic vinaigrette that coats everything. It has just the right amount of tastes and textures.
Ingredients: 2 cups radishes, halved. 2 tablespoons olive oil. Salt and pepper to taste. 4 cups mixed greens. 1/4 cup feta cheese, crumbled. 1/4 cup walnuts, chopped. 2 tablespoons balsamic vinegar. 1 tablespoon honey. 1 teaspoon Dijon mustard.
Instructions: Turn on your oven and heat it up to 425F 220C. Put the radishes that have been cut in half in a bowl and add the olive oil, salt, and pepper. Place the radishes on a baking sheet and roast them for twenty to twenty-five minutes, or until they are soft and slightly caramelized. Add the honey, Dijon mustard, and balsamic vinegar to a small bowl and mix them together using a whisk while the radishes are roasting. Now that the radishes are done, take them out of the oven and let them cool for a while. Mix the mixed greens, roasted radishes, crumbled feta cheese, and chopped walnuts together in a large salad bowl. Pour the dressing over the salad and gently toss it all together.
