Enjoy the flavors of summer with this hearty and nutritious roasted vegetable sandwich. Packed with colorful veggies, pesto, and melted cheese, it's a perfect way to savor the season.
Ingredients: 2 large red bell peppers, sliced. 1 medium zucchini, sliced. 1 medium yellow squash, sliced. 1 red onion, sliced. 2 tablespoons olive oil. Salt and pepper to taste. 4 slices of whole-grain bread. 4 tablespoons pesto sauce. 1 cup fresh baby spinach leaves. 4 slices of provolone cheese.
Instructions: Turn on your oven and heat it up to 425F 220C. Put the zucchini, yellow squash, red onion, and red bell pepper on a baking sheet. Add the olive oil, salt, and pepper, and then toss the food to coat it. Put the vegetables in an oven that has already been heated and roast them for 20 to 25 minutes, or until they are soft and slightly caramelized. In the middle of cooking, stir them around. Roast the vegetables while you toast the whole-grain bread in the toaster or on the grill until they get a little brown. Put a tablespoon of pesto sauce on each piece of toasted bread. Put the roasted vegetables, fresh baby spinach leaves, and provolone cheese slices on two of the slices that have pesto on them. Add the last few slices of bread covered in pesto to the top of each sandwich. Turn on medium heat and heat up a pan or griddle. Lay the sandwiches out on the hot surface. Cook for two to three minutes on each side, or until the bread is golden and the cheese is melted. Take the Summer Roasted Vegetable Toasted Sandwiches off the heat, cut them in half diagonally, and serve.
