Another name for this sandwich is the Roast Turkey Reuben. It's a tasty take on the traditional Reuben. On rye bread, it has cooked turkey, Swiss cheese, coleslaw, and Thousand Island dressing. It's a great mix of tastes and textures when it's grilled to perfection.
Ingredients: 4 slices of rye bread. 8 oz roast turkey slices. 1 cup coleslaw. 4 slices Swiss cheese. 1/4 cup Thousand Island dressing. 2 tablespoons butter.
Instructions: Spread Thousand Island dressing on one side of each slice of rye bread. Place a slice of Swiss cheese on two of the bread slices, dressing side up. Layer roast turkey slices on top of the cheese on those two bread slices. Divide the coleslaw evenly between the two turkey-covered slices. Top each sandwich with another slice of Swiss cheese. Place the remaining slices of rye bread on top of the sandwiches, dressing side down. Spread butter on the outsides of each sandwich. Heat a skillet over medium-low heat and place the sandwiches in the skillet. Cook for 3-4 minutes on each side or until the bread is toasted and the cheese is melted. Remove from the skillet, cut in half, and serve hot.
