Roast Carrot and Swede
I was trying to find something to go with a leftover pumpkin risotto I made the other day. Looked in my vegie draw and saw a swede, at first I thought “Hmmm, I wonder what this’ll taste like caramelised”. then i thought “carrot will go great with swede” i remember having mashed swede and carrot alot when i was a kid and I went through a caramelized carrot obsession over Christmas. But I wanted something different, something new that i hadn’t tried before. My tastebuds ached for a new adventure and so we set sail. Note: I should mention that a swede is a vegetable and not a person from Sweden.
Sweet and Salty Roast Carrot and Swede (and optional) Peas)
(serves 2 side dishes) Ingredients: (by thinly sliced i mean around 4-5mm wide) 1 Large Carrot *peeled, halved and thinly sliced* 1/4 Medium Swede (roughly) *peeled and thinly sliced* 1 teaspoon Brown Sugar 1/2 teaspoon Chinese 5 Spice 1/2 teaspoon Paprika Pinch of Salt and more to taste 1 Tablespoon Olive oil 1/4 cup frozen peas Preheat oven to 180°c (360°f), Put Carrots, Swede and Peas in a medium bowl, sprinkle brown sugar, five spice, Paprika, salt on top and mix in with Vegies. Add oil, stir round till everythings coated. Put vegies in a roasting pan and put it in the oven :-). Cook for 20-30 mins or until tender, dont forget to taste some and add salt if needed *I threw the peas in for some extra colour *This would be amazing with some nuts and/or seeds thrown in, i plan on trying it with cashews and pepita’s sometime ^_^ *Pepita’s is a fancy name for pumpkin seeds Enjoy ;-) <3 PaprikaPenny
