Cooked well for flavor but soft enought to be tightly rolled.
Meat
Absolutely the best. Clearly pulled thin on the grill but still pink in some places. Juicy without making everything else wet and pooling only a little grease near the end.
Ingredients
Fries, stribgy, yellow cheese and sourcream. The fries did provide as much bulk as the meat, and although not crunchy, they were crispy enough. The cool sourcream was a great companion to both the salsas and the hot carne asada.
Salsa
Red and green at the bar, both at the top of the condiment game.
Other
Despite the legion fast food and casual dining restaurants that litter Mission Valley, this seems to be the only good Mexican establishment. The bright yellow and red interior provides ample seating under the sombreroed visage of the Roberto's icon. A showroom display proudly fêtes the Robledo family successes over the last half-century amid smiling models posing incredibly awkwardly with tacos and burritos.

It started in California 50 years ago, but there are 48 Roberto's Taco Shops around Las Vegas - most of them 24/7/365. If you ever want to eat like a local - especially after a very long night of hard partying, just ask a taxi driver to find the nearest Roberto's.

For those of you who are thinking, 'wait, hasn't Roberto's already been featured as a special?' Yes it has, specifically last summer. But now that the sun is coming out and temperatures are going up, we wanted to alert you to a great snack for early spring: Roberto's now serves waffles too! And what could possibly be better than a warm waffle with a scoop of ice cream, some whipped cream, and a drizzle of chocolate sauce? Exactly, nothing! Well, maybe a little spot in the sunshine to eat it in. I am sure this can be arranged.
