Ingredients: 1 cup graham cracker crumbs. 1/2 cup unsalted butter, melted. 1 cup chopped pecans. 8 oz cream cheese, softened. 1 cup powdered sugar. 1 cup heavy cream. 1 tsp vanilla extract. 1 package 6 oz instant chocolate pudding mix. 2 cups cold milk. 1 cup whipped topping. Chocolate shavings for garnish.
Instructions: In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of serving glasses or bowls to create the crust. Sprinkle chopped pecans over the crust layer. In a separate bowl, beat cream cheese until smooth. Add powdered sugar, heavy cream, and vanilla extract. Beat until the mixture is thick and creamy. Spread the cream cheese mixture over the pecan layer in the glasses. In another bowl, whisk together instant chocolate pudding mix and cold milk until it thickens. Carefully spoon the chocolate pudding over the cream cheese layer in the glasses. Top each parfait with a layer of whipped topping. Chill in the refrigerator for at least 2 hours to set.
