Ingredients: 12 large scallops, patted dry. 2 tablespoons unsalted butter. 2 cloves garlic, minced. 1 tablespoon chopped fresh parsley. 1 tablespoon chopped fresh thyme. Salt and pepper to taste. Lemon wedges, for serving.
Instructions: Use medium-high heat to warm up a big skillet. Put butter in the pan and swirl it around a few times to help it melt. Let it melt for about two to three minutes, or until it starts to turn golden brown and smells nutty. When the butter turns brown, add the minced garlic and cook for about 30 seconds, until the garlic smells good. On both sides, season the scallops with salt and pepper. Place the scallops carefully in the pan, making sure they don't touch. Sear for about one to two minutes on each side, or until golden brown and caramelized. In the last minute of cooking, sprinkle the scallops with chopped parsley and thyme. This will let the herbs flavor the butter. Place the scallops on a plate and drizzle them with any brown butter and herbs that are left in the pan. Right away, serve with lemon wedges on the side.
