Turkish Delight Macarons are filled with the sweet delight of Turkish delight pieces and have a delicate almond macaron shell with exotic flavors of rosewater and lemon zest. A delicious treat fit for any celebration!
Ingredients: 200g almond flour. 200g powdered sugar. 150g egg whites aged, room temperature. 50g granulated sugar. 1/4 tsp cream of tartar. 1 tsp rosewater extract. 1/2 tsp lemon zest. Pink food coloring optional. Turkish delight pieces for filling.
Instructions: Set the oven temperature to 300F 150C. In a mixing bowl, sift almond flour and powdered sugar together. Put aside. Beat the egg whites until frothy in a different bowl and stir in the granulated sugar and cream of tartar. Beat on until stiff peaks start to form. Shake the almond flour mixture gently into the egg whites until the batter is the consistency of lava. Incorporate lemon zest, rosewater extract, and pink food coloring if preferred into the mixture. Fold to ensure everything is well combined. Spoon the mixture into a piping bag fitted with a round tip, then pipe tiny rounds onto a parchment paper-lined baking sheet. After releasing any air bubbles by tapping the baking sheet against the counter, leave the macarons to sit at room temperature for 20 to 30 minutes, or until a skin forms. Bake the macarons for 15 to 18 minutes, or until they are set and have a slight crunch, in the preheated oven. Take out of the oven and leave on the baking sheet to cool completely. To make each macaron, place pieces of Turkish delight between two macaron shells after they have cooled. Before serving, let the flavors settle for a day in the refrigerator in an airtight container.
