A succulent whole chicken infused with the aromatic flavors of orange and saffron, slow-cooked to perfection for a tender and juicy roast.
Ingredients: 1 whole chicken about 4-5 lbs. 2 oranges, sliced. 1 onion, sliced. 4 cloves garlic, minced. 1 teaspoon saffron threads. 1 teaspoon dried thyme. 1 teaspoon paprika. Salt and pepper to taste. 1/2 cup chicken broth. 2 tablespoons olive oil.
Instructions: Slice the orange, cut up the onion, and mix the garlic and orange peel together. Put paprika, salt, pepper, saffron threads, and dried thyme in a small bowl. Cover the chicken with the spice mix. Spread olive oil on the chicken and gently rub it in. Toss the chicken with the spices and put it on top of the orange and onion slices in the slow cooker. Cover the chicken with chicken broth. Put the lid on top and set the heat to low. Cook for 6 to 8 hours, or until the chicken is full cooked and soft. After the chicken is done, take it out of the slow cooker and let it rest for a few minutes. Then, cut it into pieces. Slices of orange and onion from the slow cooker go well with the chicken when you serve it.
