Finally got to introduce @hijodereina to Hide-San this year... sadly, we didn’t get time to work with him in the workshop, but we had an awesome time with his son (and my very good friend and great teacher) @sakai_hide ... great conversation about the industry, knives, and (most importantly for me) food. I always enjoy that these craftsmen have direct relationships with the chefs who buy from them. It’s a unique thing here in sakai. Because of this, I am able to meet and speak with some really talented chefs and learn more about traditional Japanese cuisine and how exactly they use and care for knives here.
