This Green Curry Coconut Crusted Baked Salmon is a flavorful and aromatic dish that combines the richness of coconut with the zing of green curry paste. The crispy coconut crust adds a delightful texture to the tender salmon fillets.
Ingredients: 4 salmon fillets 6 oz each. 1/2 cup unsweetened shredded coconut. 2 tbsp green curry paste. 1/4 cup coconut milk. 1/4 cup breadcrumbs. 1 tbsp lime juice. 1 tbsp olive oil. Salt and pepper to taste. Fresh cilantro for garnish optional.
Instructions: Preheat your oven to 375F 190C. In a bowl, mix green curry paste, coconut milk, lime juice, olive oil, salt, and pepper. In another bowl, combine shredded coconut and breadcrumbs. Season salmon fillets with salt and pepper. Dip each salmon fillet into the green curry mixture, coating it evenly. Then, coat the salmon with the coconut-breadcrumb mixture, pressing gently to adhere. Place the coated salmon fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and the crust is golden brown. Garnish with fresh cilantro if desired before serving.
