Ingredients: 4 salmon fillets. Salt and pepper to taste. 2 tablespoons olive oil. 3 cloves garlic, minced. 1 cup cherry tomatoes, halved. 1 cup spinach. 1/2 cup heavy cream. 1/4 cup grated Parmesan cheese. 1 teaspoon Italian seasoning. Fresh parsley for garnish.
Instructions: Use salt and pepper to season the salmon fillets with. Warm up the olive oil in a big pan over medium-low heat. Add the minced garlic and cook until it smells good. Put in the cherry tomatoes and cook them until they get soft. Add spinach and stir until it wilts. Put in the heavy cream and season with Italian herbs and Parmesan cheese. Mix everything together well. Place the salmon fillets in the pan and pour the sauce over them. Turn down the heat and cover. Cook for 5 to 7 minutes, or until the salmon is done. Before serving, sprinkle with fresh parsley.
