Ingredients: 200g frozen salmon fillets, thawed and flaked. 6 eggs. 1/4 cup milk. 1/2 cup grated cheese. 1 small onion, diced. 1 bell pepper, diced. 2 tablespoons olive oil. Salt and pepper to taste. Fresh herbs for garnish optional.
Instructions: Preheat oven to 180C 350F. In a bowl, whisk together eggs, milk, salt, and pepper. Heat olive oil in a skillet over medium heat. Add diced onion and bell pepper, saut until softened. Add flaked salmon to the skillet, stir to combine with vegetables. Pour egg mixture over the salmon and vegetables in the skillet. Sprinkle grated cheese on top. Transfer the skillet to the preheated oven. Bake for 15-20 minutes or until the frittata is set and the top is golden brown. Remove from oven and let it cool slightly before slicing. Garnish with fresh herbs if desired. Serve warm and enjoy!
