With the bright flavors of lemon and the sweet crunch of almond bark, these Almond Bark Lemon Brownies are a fun take on the classic brownie. They're a lovely treat for any event and are great for people who like citrus fruits.
Ingredients: 1/2 cup almond bark, chopped. 1/2 cup unsalted butter. 1 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1 tablespoon lemon zest. 1 tablespoon lemon juice. 1/2 cup all-purpose flour. 1/4 teaspoon salt. Powdered sugar, for dusting.
Instructions: Preheat your oven to 350F 175C. Grease and line an 8x8 inch baking pan with parchment paper. In a microwave-safe bowl, melt the almond bark and butter together in 30-second increments, stirring in between, until smooth. In a separate bowl, whisk together the sugar, eggs, vanilla extract, lemon zest, and lemon juice until well combined. Pour the melted almond bark mixture into the egg mixture and stir until smooth. Add the flour and salt to the batter, and stir until just combined. Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean. Allow the brownies to cool completely in the pan on a wire rack. Once cooled, dust the top with powdered sugar. Cut into squares and serve.
