Today’s lunch is salted egg shrimp. It is deep-fried shrimp coated with a sauce made of salted egg yolks.
In the old day, my mom would steam the salted egg, cracked and just eat them as it is, or most steam with minced meat. However, salted egg yolk is used to enhance the flavor of various dishes now.
Salted egg yolk shrimp is one of them. My version is dry, without adding any milk, so that all egg yolks will stick onto the shrimp.
