As someone who is middle management at a grocery store (Jewel-Osco's one lone Iowa location, lol) they are indeed absurdly complicated in ways you really wouldn't expect. The fact that you have a spreadsheet for it is adorable/amazing, though.
Yeah, I mean even the stuff I can see in research is pretty intense. I'd love to take some time off work and do some kind of management internship with Trader Joe's or similar, but if I had that kind of money I wouldn't be so worried about sinking money into a grocery store vanity project. :D

that reminds me of a boutique grocery store that my spouse worked at, would have succeeded, but one of the big owners pulled out right before open, and sometimes the other owners would be more into the fixtures and planning, so that the running of the store went by the wayside, it closed in 6months.
Well, and that's the worry of course, that some unanticipated expense or issue would fuck the whole thing up. I like to think I'd be a pretty good manager, especially since a store that size wouldn't need a ton of staff, but it's just, not knowing what to anticipate would screw me, I'm sure.
