Ingredients: 12 oz. tuna steak, diced. 8 oz. soba noodles. 1 cup cherry tomatoes, halved. 1/2 cup cucumber, diced. 1/4 cup red onion, thinly sliced. 1/4 cup fresh cilantro, chopped. 2 tbsp soy sauce. 1 tbsp rice vinegar. 1 tbsp sesame oil. 1 tbsp honey. 1 tsp ginger, minced. 1 clove garlic, minced. Salt and pepper to taste. Sesame seeds for garnish.
Instructions: Cook soba noodles according to package instructions. Drain and set aside. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic to make the dressing. In a large bowl, combine cooked soba noodles, diced tuna, cherry tomatoes, cucumber, red onion, and cilantro. Pour the dressing over the noodle mixture and toss gently to coat everything evenly. Season with salt and pepper to taste. Garnish with sesame seeds before serving. Serve chilled or at room temperature.
