Wednesday night, with Seamus and a video crew from Vice magazine. They were shooting a segment for a series they call "Munchies", described as "our wide-eyed answer to the glut of sleepy TV food shows. We're plying our favorite chefs with food, drink, and questions, and then scouring their kitchens for late-night snacks." I was invited to tag along and reap in the plying and scouring. Above is the chef's version of a late night snack: lamb paella with hearts and kidneys as well as grilled flounder, greens and crispy patatas bravas. The Vice crew was kind enough to let me shoot off a few "rolls".
