If we happen to black out the card before the due date, are we allowed to get another one? Even if it’s after sign ups are over with?

As long as the first card is completely blacked out. You’ll be able to ask to only have certain categories and not others for a second BUT you won’t be able to get any squares changed the second time around. If you black that one out too you’ll, of course, receive two badges.
