Chicken Salad for Sandwiches With Grapes and Nuts
8 servings
This is a very tasty chicken salad that makes great sandwiches no matter what type of bread or rolls are used.
Ingredients
2 cooked Chicken breasts, diced into bite size pieces or 4 cups of cooked chicken, diced
1 cup of celery finely diced
1 cup red seedless grapes cut in half
½ cup dried cherries
½ cup chopped, roasted pecans
1 cup mayonnaise
½ teaspoon salt
1/8 teaspoon ground black pepper
Slices of bread, croissants or rolls
Directions
Put the diced chicken in a bowl along with the diced celery, halved grapes, dried cherries, roasted pecans, mayonnaise, salt and pepper and mix.
Serve on the bread of your choice and enjoy!
Notes
You can cook the chicken breasts in the microwave with broth so it doesn’t dry out. Place the chicken in one cup of broth in a microwave safe dish. Cover with plastic wrap but leave one corner open to vent. Cook on medium for around 10-14 minutes until done. When it is cool enough to handle you can dice the breast. Or just use leftover chicken.
To roast the pecans: melt one tablespoon of unsalted butter in a small, microwave safe bowl. Add ½ cup pecans and ¼ teaspoon of salt to the bowl with the melted butter and mix well. Place parchment paper on a rimmed baking sheet and pour the pecans onto the baking sheet. Roast the pecans in a 300˚ oven for about 10 minutes. Stir the pecans then continue roasting them in the oven for another 5-10 minutes. When cool, place the pecans in a food processor and chop the nuts. This should only take a minute or so.
Add more pepper if you prefer.
You can find dried cherries in larger grocery stores. They are usually next to raisins and other dried fruit.

Did you know that dog tags are called dog tags because they are used to identify fallen soldiers, much like a collar would be used to help identify a dog.
