A South Indian dish called wheat rawa adai crepes is made with wheat semolina and a variety of vegetables. They are healthy and taste great. You can eat these crepes for breakfast or as a snack.
Ingredients: 1 cup wheat rawa semolina. 1/4 cup rice flour. 1/4 cup grated carrot. 1/4 cup finely chopped onion. 2-3 green chilies, finely chopped. A handful of chopped fresh coriander leaves. 1/2 tsp cumin seeds. Salt to taste. Water as needed. Oil for cooking.
Instructions: In a mixing bowl, combine wheat rawa, rice flour, grated carrot, chopped onion, green chilies, fresh coriander leaves, cumin seeds, and salt. Gradually add water to the mixture and stir well to form a thick batter. Ensure there are no lumps. Let the batter rest for 15-20 minutes to allow the rawa to absorb the water. Heat a non-stick pan or griddle over medium heat and grease it lightly with oil. Pour a ladleful of the batter onto the hot pan and spread it in a circular motion to form a thin crepe. Drizzle some oil around the edges of the crepe and cook until it turns golden brown on the bottom. Flip the crepe and cook the other side until it becomes crisp and golden brown as well. Repeat the process with the remaining batter to make more crepes, adding a little oil for each crepe. Serve the wheat rawa adai crepes hot with your favorite chutney or dip.
