Taiwanese Scallion Shaobing

These are really really good. Recipe is from Cooking in Chinglish. We made a few adjustments: we added a bit more water to the dough, about 3 tbsp, subbed honey for the sugar in the dough, and we added 1 1/2 tsp sesame paste to the filling, which I think were good adjustments. Next time I would halve the salt in the filling because it was too salty, and I would try using egg wash instead of sugar syrup wash for the top because the sesame seeds really like to come off after baking. We made scrambled eggs with neufchatel and thyme (recipe from Feast by Sarah Copeland) and stuffed them inside while the shaobing were still warm. Picture is of a frozen one the day after baking.
