Pumpkin of Plenty! - Shoku-Iku: Japanese conscious eating for a long and healthy life by Makiko Sano

This is a Japanese monk vegan recipe. It is rich in umami and utterly delicious, with the soft, sweet pumpkin and tofu, but with a fresh, simple flavour. Use a round green squash with bright orange insides: Crown Prince is good.

Serves 3–4 

1 small pumpkin, about 15cm in diameter 

1 tbsp sesame oil 

30g carrot, cut into 1cm strips 

2 shiitake mushrooms, finely sliced 

20g frozen edamame beans, defrosted sea salt 

350g block of firm tofu, drained and dried with kitchen paper 

2 tbsp white sesame seeds, crushed 

 1 tbsp cornflour 

Sauce 

400ml Basic dashi 

2 tbsp mirin 

2 tbsp light soy sauce 

2 tbsp cornflour

Cut a 3cm lid off the top of the pumpkin. Deseed the inside of the pumpkin. In a large steamer, steam the whole pumpkin with its lid for 15 minutes.

Meanwhile, heat a pan over a medium heat and add the sesame oil. Stir-fry the carrot, mushrooms and edamame for three minutes, seasoning with sea salt. Break the tofu into chunks and add them, too.

Add the crushed sesame and cornflour and mix well until the carrots soften. Spoon the tofu and vegetable mix into the pumpkin and steam for another 10 minutes.

Meanwhile, heat a pan over a medium heat and add the dashi, mirin and soy sauce. Separately mix the cornflour with 5 tbsp of water, add to the pan and stir well until it thickens.

Remove the pumpkin lid and tip in the sauce. Serve.

食育DAY　小麦粉と全粒分　2015.12 

この日はクッキーを2種類（小麦粉でつくったもの、全粒分も混ぜてつくったもの）を用意し、香りや味、食感を比べていただきました。

＜全粒粉とは何か＞

小麦の、表皮や胚乳、胚芽がすべてついた状態で粉にしたもの。お米でいえば、白米に対しての玄米のようなものですね。

茶色がかっており、クッキーやパンの製造に用いられ、独特の風味や食感があります。小麦粉よりも栄養価が高く、ビタミン、ミネラル、食物繊維の含有量が多く、特にビタミンB1と食物繊維、鉄分は小麦粉の約3倍となっています。

＜小麦粉の種類＞

小麦粉は、小麦の胚乳部分を製粉してもので、主に原料小麦のもつたんぱく質量により、強力粉、中力粉、小麦粉に分けられます。

★薄力粉

たんぱく質含有量が8%以下。『軟質小麦』が主な原料。天ぷらの衣、とろみづけ、クレープなどに使用される。

★中力粉

たんぱく質含有量が9%以下。『軟質小麦』が主な原料。グルテンはやや弱めで、主にそうめんやうどんなどのめん類に使用される。

★強力粉

たんぱく質含有量が12％程度。『硬質小麦』が主な原料。グルテンが強く、パン生地やパイ生地に適している。麩の原料にも使われる。

食育DAY　鰹だしと椎茸だし　2015.11

この日は、がんもどき、里芋、人参それぞれを、鰹だしと椎茸だしで炊いたものを用意し、学生さんに香りや味の違いを楽しんでもらいました。

今回は、だしをとる素となる、鰹節と干ししいたけについての知識をご紹介します。

＜鰹だし＞

★鰹節のルーツ

平安時代の律令に、『硬魚（かたうお）』として記載されたのがはじまり。燻して乾燥、かび付けを行うようになったものは、江戸時代に現れる。

★鰹節ができるまで

鰹をゆでてから、燻して乾燥させ、かび付けをしたのち、天日干しをする。全工程終了までに、150日かかる。

★だしに魚の油が浮かないワケ

鰹節についているカビは、様々な酵素を生産してたんぱく質が分解された結果、アミノ酸などが蓄積されるのと同様に、油脂も分解されるため。

★うまみ成分

鰹節には、『イノシン酸』といううまみ成分が含まれている。昆布に含まれる『グルタミン酸』と一緒にすると、うまみの相乗効果で味わい深いだしになる。

  ＜椎茸だし＞

★干し椎茸のルーツ

鎌倉時代の初頭、曹洞宗の道元が、『典座教訓』の中で、中国に留学したときに、干し椎茸を貝に来た老人のことを書いている。本格的に広がったのは、江戸時代。

★干し椎茸ができるまで

天日、赤外線、熱風、真空凍結などの方法があり、熱風を用いることが多い。温度を変えて繰り返し乾燥させ、全部で約20時間以上かかる。

★干し椎茸の種類

肉厚で笠の表面に白い亀裂の入った『どんこ』、薄く笠がなめらかな『香信（こうしん）』が代表的。

★香りとうまみの成分

生椎茸を乾燥させる際、酵素と熱のはたらきにより、香り成分『レンチオニン』とうまみ成分『グアニル酸』が10倍に増える。

食育DAY　から揚げと竜田揚げ　2015.10

リラックス食堂では、毎月一度、食育DAYをもうけ、「食べながら、食について考える」取り組みを実施しています。

10月の今回は、みんな大好きな鶏のから揚げと鶏の竜田揚げを食べ比べていただき、そもそもこの2つの違いとは、呼び名の由来について紹介しました。

★から揚げ★

揚げ物の一種で、材料に小麦粉や片栗粉をまぶして揚げたもの。材料によっては、しょうゆなどで下味をつけてから揚げるものも。鶏、魚介、野菜などで用いられる調理法。『からあげ』の表記については、テレビ・新聞など、メディアや出版の違いにより、「空揚げ」「から揚げ」「唐揚げ」といった表記が使い分けられているようです。

★竜田揚げ★

肉や魚に、しょうゆとみりん、または酒を加えてもので下味をつけ、片栗粉をまぶして油で揚げる料理。「竜田」は、奈良県の紅葉の名所、「竜田川」にちなんだ名前。赤褐色に揚がり、所々片栗粉の白い部分があることから、紅葉の流れる竜田川に見立てられたそう。

＜まとめ＞

竜田揚げは、下味の調味料と粉が決まっている、から揚げの一種。

食育DAY　白味噌　VS　赤味噌　2015.9

和食に欠かせない調味料、お味噌。一口に味噌といっても、地域によって種類や製法はさまざま。そこで今回は、白味噌と赤味噌を使ってつくった味噌汁を飲み比べていただきながら、これらの違いについて紹介しました。

＜白味噌＞

塩分が5%～7%と、赤味噌に比べて低く、一週間程度の熟成で仕上げる。このため、保存性は他の味噌に比べて劣る。

くせがなく、香りがほのか。GABAを含み、脳の興奮を抑えるなどのリラックス作用が期待される。

また、乳酸を多く含み、（スプーン一杯でヨーグルト100g分の乳酸菌相当）腸内環境改善や、便秘の改善に役立つと考えられる。

＜赤味噌＞

塩分が10～13%と白味噌に比べて高く、熟成期間は短めな仙台味噌でも3ヶ月、長いものだと2年近くかかる。

保存性が高く、濃厚なうまみが特徴。みその色は、熟成の温度が高いほど、また期間が長いほど濃くなる。

赤みその色の素であるメラノイジンは、活性酸素を除去したり、腸内を刺激し、代謝を活性化させたりする働きがある。
