Super fast, easy breakfast win today!! Didn't feel like cooking so I experimented. Breakfast Tacos... because.. tacos. . 😍 Leftover boiled eggs, crumbled bacon, cheddar cheese, everything bagel seasoning on a tortilla. Microwave for about 30 seconds until your cheese melts. I topped with a little zesty sauce because I like it spicy, but salsa would be good too, I think.. easy meal in under a minute!! It wasn't a gourmet meal, but it was yummy, fast and easy using things I already had on hand. Hubby is on vacation so that means Monday brunch! Shortcut blueberry pancakes this morning. I use all in one pancake mix, add a splash of vanilla extract and tossed in some blueberries out of the freezer. Melt a pat of real butter and drizzle with maple syrup 😍 Yum yum.. but total carb & sugar crash.
