A hearty and tasty Italian soup made with frozen meatballs that can be made quickly and easily. This soup is great for busy weeknights or cozy weekends because it is full of vegetables and simmered in a tasty broth.
Ingredients: 1 package frozen meatballs. 4 cups beef or chicken broth. 1 can diced tomatoes. 1 cup chopped carrots. 1 cup chopped celery. 1 cup chopped onion. 2 cloves garlic, minced. 1 teaspoon Italian seasoning. Salt and pepper to taste. 1 tablespoon olive oil. 2 cups baby spinach leaves. Grated Parmesan cheese for serving.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Cut up the onion, carrots, celery, and garlic and add them to the pan. About 5 minutes of cooking will soften the food. Add tomato chunks and beef or chicken broth. Italian seasoning, salt, and pepper should all be mixed in. Slowly heat the soup and add the frozen meatballs. After 10 to 15 minutes, the meatballs should be fully heated through. Add baby spinach leaves and stir. Cook for another two to three minutes, until the spinach is wilted. Check the seasoning and make changes if needed. Grate some Parmesan cheese on top and serve hot. Have fun!
