So last week we had a Labor Day staff luncheon. Everyone had signed up to make something. I signed up for pink strawberry daiquiri cake. And now with high school starting, I’m up at 5 am every morning, so I was able to make this cake at 7 am!
The cake is so simple. Start by baking a strawberry cake. Go to the store and buy one of those strawberry cake mixes and bake it. 25 minutes. But here’s the catch. The cake mix needs 3 eggs, 1/4 cup oil and the juice of a frozen can of strawberry daiquiri mix. Yep, that’s it! Bake it! Make sure you butter and flour the cake pans too.
After the cake comes out of the oven, cool it about 30 minutes. You’ll need a lot of strawberries for the next part. I bought 2 lbs! But I didn’t need them all, Clementine ate the rest. For the middle of the cake, cut the strawberries lengthwise, placing all over the middle of the cake, after it has been frosted with frosting. I used pink strawberry frosting, but after eating a slice, I would used plain white frosting next time. The pink looks pretty though.
Slide the other half of the cake on top, frost and smother with the remainder of strawberries. That’s it! Put it in the fridge until it’s time.
There’s your cake! Top it off with one big strawberry in the middle and serve.
