Today’s breakfast was epic! Cheese and freshly picked chard soufflés with bacon, fresh salad greens and 1/2 a bun with avocado and tomato. I try to always start my day with lots of vegetables included. My kids like the salad greens with a tiny bit of mct+ghee, a spritz of vinegar and a sprinkling of sea salt on them. Have to say I was pleasantly surprised when I tasted it too LOL. Last nights meal was a delicious Thai Peanut Pork salad with psyllium noodles. The kids ate it like it was going to suddenly disappear. I used Sambal Oelek chilli sauce to slow myself down lol. I’ll put the link to the noodles and dressing in the comments. I totally think these noodles will be used frequently in my household and I already have ideas for modifications! Happy Thursday friends and family. I hope everyone is healthy and happy out there. Here is a picture of some licorice all sorts candy that my kids and I made the other night. Unfortunately I have not been able to find anise extract in my town so the first time I use the recipe, we made grape licorice which was OK but not what I was looking for. The next night we tried making these allsorts. They are not traditional because they have a maple layer, a butterscotch layer, and a French vanilla layer with a little bit of shredded coconut in it. Delicious and very sweet and satisfying. Plus the recipe gave me many many ideas for making more types of candy. The link will be in the comments for the recipe. Happy Easter page followers, friends and family! Breakfast today didn’t have much to show because it was leftovers of the delicious casserole from yesterday. Just realized I posted that breakfast on my FB Sisketo group, not here on my Insta. It was an eggs Benedict casserole and it was really delicious. For breakfast-dessert because I deserve a special little Easter treat, it’s a few raspberries, a few blackberries, some French vanilla whipped heavy cream and sugar-free strawberry Jell-O with Bengal spice tea as the boiling liquid in the Jell-O which gives it a cinnamony flavor. So good! Last nights meal was super tasty although not my most beautiful meal lol. I am tracking macros currently so I used part of a cheese stick on top of the pork chop and part of it finely cut onto the salad below the chop. I did this because it’s nice and easy to read the label on the cheese stick and add in those numbers to my app. I fried the chop in avocado oil in a cast iron pan and finished it with heat off and melting butter on top. I sprinkled the chop before cooking with herbs such as sumac, poultry seasoning, onion powder, and a healthy sprinkling of sea salt. The salad was kale slaw and spinach with walnut oil, ACV, a small sprinkle of garlic powder and more sea salt. The dip shown was Franks hot sauce and some homemade keto bbq sauce (google keto barbecue sauce and pick a recipe with ingredients that you like and then season to your taste, we make up a double or triple batch and put it into a squeezable ketchup bottle). The end result was absolutely fabulous and not too difficult. My daughter and I attempted a new recipe yesterday. The recipe was for blintzes. I’ve never been much of a patient cook. I tried hard to make the crepes for the blintzes but they didn’t turn out very thin at all. We had all the ingredients already ready so ended up just making a little oven cake with it with Krisda chocolate chips on top. We also made some strawberry yogurt out of full fat sour cream, vanilla and caramel extracts, puréed frozen strawberry, and powdered erythritol. We topped the cake with the yogurt and leftover strawberry purée. It was very good! Greetings for Thursday, fellow healthy eaters and social distancing partners from afar LOL! I took the kids out of town yesterday and went up to Upper Campbell lake. We hiked around in the areas where the water has gone down low and there are parts that have mud, stumps, and decomposing half-trees from logging years ago. We acted like we were in a hot lava zone and tried to keep out of the mud walking on the trees and stumps - so fun!. We brought our bikes and rode around and explored. I gave my daughter my phone for pics so it’s nice to actually have a few of myself for once. When we got home, I had taken out taco beef from the freezer for taco salads. Spinach, full fat sour cream, grated cheddar, peppers, tomato, avocado, taco beef, hot sauce and the best part- crunched up seed crackers for the “crunchy taco taste”. YUMMMY (worth the caps-lock Yellll 😂). Our dessert is shown in the next picture. It’s a little blurry because I was barely able to stop eating to take a picture. We had sugar-free 🍓 Jell-O (I don’t usually give the kids chemical stuff but I feel like it’s an OK treat once in a while), French vanilla whipped heavy cream, just peanuts peanut butter and some stevia-flavored chocolate sauce. Omg, again super YUMMY! 😛 If you’re a sweet tooth person, I recommend making your dessert and then packaging all the leftovers way back at the back of the fridge so that you can’t go back because we ended up eating all the Jell-O and having 2 little cups each of the dessert itself. LOL, I do think we deserve a little treat for being in our homes this much right! Still tracked it though and forced myself to be honest with my tracking. The last picture is of me. Kind of excited that I got a picture cause I’m not usually in them and it was such a beautiful blue sky. This is much longer than I planned but they usually are. Hi everyone! Happy April. It’s a weird time and everything feels off but it’s a new month and important to be thankful for what we do have, versus dwelling on what we don’t. I have been talking about some of the stresses I have in getting back to being in ketosis and eating right for me. I’ve been over eating, stress eating, mindless eating, boring eating, whatever you call it; it’s been wrong and it doesn’t make me feel good about anything in my life. Yesterday I tracked using my app (which I mentioned in yesterday’s post) and I had an excellent day. Had A really good sleep and woke up feeling so good today. The sun is out and the kids and I are going to head to a lake for some bike riding as lunch outdoors. Here is my breakfast this morning, I weighed out my veggies and had it with a decaf mocha shake and it was awesome. I’m not going to weigh my veggies forever but till I get back to a sense of knowing how much carbs are in each thing, this makes me feel better in general.
