It's kind of complicated because Rachel's with Finn, but one night they're studying for a history test and Sam kisses her. It takes them a long time to actually get anywhere from there too, but Sam again makes the first move and asks Rachel on a date when they're both ready.
Who said ‘I love you’ first;
Sam. He sort of says it by accident one night; he's half-asleep and they're cuddling on the sofa and he doesn't remember saying it at all. So Rachel, wanting to be the first one to say it, tells him the next night.
Not often, whilst Rachel does get mad sometimes she's never usually mad at Sam. If she is, he doesn't find it hard to calm her down and honestly she can't stay mad at him for long.
Whose big spoon/little spoon;
Sam's the big spoon, which Rachel loves because she loves how he holds her. She likes his arms and always traces her fingers along them absent-mindedly when they cuddle.
What their nicknames are for each other;
They call each other by their names; Rachel isn't good with nicknames and Sam calls her babe sometimes, but he knows she normally prefers when he calls her Rachel.
Rachel taught herself how to cook because Sam definitely can't -- though she does love the small things he makes even if he can't cook her dinner. She loves making things for him and she often bakes him cakes or something even though he always says she's trying to fatten him up.

Who remembers their anniversaries;
They both do, though Rachel is much more obvious about it. She'll leave post-its around the house sometimes if there's special things she wants Sam to remember and he never forgets.
Their favorite thing to do together (besides sex);
Singing, definitely. Rachel loves Sam's voice and often she makes him sing to her whilst they're in bed because his voice is so soothing. She likes singing with him too, they normally duet in the mornings as they're getting ready for the day ahead.
Who ‘wears the pants’ in the relationship;
Rachel, definitely. She likes to be in control of everything but she always makes sure to check things with Sam when it comes to big decisions.
How they would get engaged;
Rachel always wants everything to be big -- she wants to be able to tell amazing stories about her engagement and her wedding, and Sam ends up surprising her one night after her show. They decide to meet afterwards and go for a later dinner but when Rachel looks for him, she finds him on the stage. He ends up signing and proposing to her and it's the happiest she's ever felt.
What their wedding would be like;
Rachel's always wanted her wedding to be big, so she found a castle in New York and that's where they were married. She wanted everything to be perfect, and when she saw Sam down the aisle, staring at her with pure love in her eyes, everything was just as she pictured it. Even if it did take a whole year to plan, it was worth it.
How many kids they’ll have;
I imagine them having two. The first is a girl (Amelia) that adores Sam and follows him everywhere -- she's a daddies girl even if she is a lot like Rachel. (Psh, my headcanon since you answered that question.) The next is a little boy who also looks more like Sam, though his hair is much more like Rachel's. He's soften spoken and shy and loves animals. He's one of the smartest kids they've ever met, and he'll read any book he can get his hands on. Amelia always complains about it because his books always left around the house (Daniel sometimes forgets things.)
