Ingredients: 1 whole turkey 12-15 pounds. 1/2 cup kosher salt. 1/4 cup brown sugar. 2 tablespoons black pepper. 2 tablespoons paprika. 1 tablespoon garlic powder. 1 tablespoon onion powder. 1 teaspoon cayenne pepper. 1 cup applewood chips, soaked in water. 1 cup hickory chips, soaked in water.
Instructions: Rinse and pat dry the turkey. In a bowl, mix kosher salt, brown sugar, black pepper, paprika, garlic powder, onion powder, and cayenne pepper to create the dry rub. Rub the dry rub evenly over the turkey, including the cavity. Let it sit in the refrigerator for at least 4 hours or overnight. Prepare the smoker with a combination of applewood and hickory chips. Preheat the smoker to 225F 107C. Place the turkey on the smoker rack and smoke for approximately 30 minutes per pound or until the internal temperature reaches 165F 74C. Add soaked wood chips throughout the smoking process to maintain smoke flavor. Once done, remove the turkey from the smoker and let it rest for 15-20 minutes before carving.
