Got a few requests for my bacon jam recipe, so I thought I'd post it for anyone who's interested. I strongly suggest tasting as you go to tailor the spices to your liking - especially when playing with chili peppers 😉🌶💣💥 And thank you @sarahoh.sarahno for the extra motivation to jot this down! Would you please share? ☺ Ingredients: • • 1lb thick-cut bacon, cooked and torn/cut into tiny pieces • 1 large yellow or white onion, finely chopped • At least 4 large cloves of garlic, minced • 1 medium to large shallot, finely chopped • Bourbon, at least 4oz • Apple cider vinegar, at least 4oz • Coffee, at least 4oz • Brown sugar, at least 1 cup • Maple syrup, 1/2 cup • Chili paste or finely chopped chili peppers (to taste) • 1 tsp. Fresh thyme leaves, minced • 1 tsp. Smoked paprika (optional • Salt and pepper (to taste) ▪▪▪▪▪▪▪▪ Now for the loosely written instructions... ▪ > In a large frying pan, on medium high heat, sautee the onions in oil or butter and add the shallots and garlic just as the onions begin to turn a golden brown. Immediately reduce heat to low. ▪ > Add the rest of the ingredients and cook on low until the mixture be comes jam-like. Then remove from heat. ▪ > Keep in mind that it will continue to thicken after removed from the heat, so don't let it get too thick. ▪ > As soon as it cools, store in air-tight containers and refrigerate. It can be frozen as well, but keeps in the fridge for about a week. ▪ > Serve it with bread or crackers.
