These Lemon & Vanilla Cream Sandwiches are a delicious mix of creamy vanilla and sour lemon. They are made with soft lemon cookies. A cool treat that's perfect for a hot day!
Ingredients: 1 cup heavy cream. 1/2 cup sweetened condensed milk. Zest of 1 lemon. 1 tablespoon lemon juice. 1 teaspoon vanilla extract. 16 lemon cookies.
Instructions: In a mixing bowl, whip the heavy cream until stiff peaks form. Gently fold in the sweetened condensed milk, lemon zest, lemon juice, and vanilla extract until well combined. Transfer the mixture into a shallow container and freeze for at least 4 hours or until firm. Once the ice cream is firm, take two lemon cookies and place a scoop of ice cream on one cookie. Top with another cookie to make a sandwich. Repeat with the remaining cookies and ice cream. Serve immediately or wrap each sandwich individually in parchment paper and freeze for later enjoyment.
