Ingredients: 1/2 cup cold water. 3 tablespoons unflavored gelatin. 1 1/2 cups granulated sugar. 1/2 cup light corn syrup. 1/4 cup Cream of Earl Grey tea leaves. 1/4 teaspoon salt. 1 teaspoon vanilla extract. Powdered sugar, for dusting.
Instructions: In a small bowl, combine the cold water and gelatin. Let it sit to bloom for about 10 minutes. In a saucepan over medium heat, combine the granulated sugar, corn syrup, Cream of Earl Grey tea leaves, and salt. Stir until the sugar has dissolved, and the mixture reaches 240F 115C on a candy thermometer. Remove the saucepan from heat and strain out the tea leaves. Using an electric mixer, start whisking the gelatin mixture on low speed, gradually increasing to high speed. Whip until it becomes thick and white, about 8-10 minutes. Slowly pour the hot sugar syrup into the whipped gelatin while continuing to whip on high speed. Be cautious to avoid splatters. Add the vanilla extract and continue to whip for another 2-3 minutes until the mixture is glossy and holds stiff peaks. Grease a square baking pan and dust it with powdered sugar to prevent sticking. Pour the marshmallow mixture into the prepared pan and smooth the top with a spatula. Dust the top with more powdered sugar and let it set at room temperature for at least 4 hours or overnight. Once set, cut the marshmallows into squares or use cookie cutters to create shapes. Dust the cut edges with more powdered sugar to prevent sticking.
