How did Vlad steal human souls, and what does he gain from them? Also fun fact, in the rpg "vampire: the masquerade" vampires can consume the souls of other vampires in an act called "diablerie" and potentially become stronger from it.
Can vampires in your HT AU steal the souls of other vampires and monsters too?
I think the idea of stealing human souls would be "cute" to a vampire who has consumed the souls of multiple rival vampires.

As we know from some stories and series, vampires drink blood not only to feed themselves, but also to gain vitality. (Even with that vitality they can fight against humans and low-rank monsters easily)
In the case of souls, those who have practice, the "art" and have the strength to do it, gain greater power to control higher race monsters and higher ranking vampires.
And if they have this art well mastered, they are capable of stealing the soul of a vampire.
Any vampire who trains and has the means can be able to do this. It's not just for the noble or the rich, there are things that neither money nor status can buy.

Since it's a headcanon of mine, I'll base it on an example: if you've seen the bloodbending of Avatar the Last Airbender This would be the possession of bodies, and with a little more force it reaches the "soul theft" and leaves the body as a simple empty sack of meat but with vital signs but obsolete. Almost like a zombie.
And for the vampire (like Vlad) who has more souls is so much more powerful, durable in fights, encompasses more powers that are not limited to common vampires, also in wealth and fear before others. And above all, they become more "invincible" that it would take more than a stake, silver and holy water to kill them.
But of course, too much power can corrupt any vampire, slowly consuming them until they become heartless, sadistic, cruel and blind with hate and power.
That's why they call them demons.
