Ingredients: 4 boneless, skinless chicken breasts. 2 cups buttermilk. 2 cups all-purpose flour. 2 teaspoons garlic powder. 2 teaspoons paprika. 1 teaspoon cayenne pepper. Salt and pepper to taste. Vegetable oil for frying. 4 prepared buttermilk waffles.
Instructions: In a large bowl, combine buttermilk, garlic powder, paprika, cayenne pepper, salt, and pepper. Add chicken breasts to the bowl, making sure they are fully submerged in the buttermilk mixture. Cover and refrigerate for at least 2 hours, or overnight for best results. In a shallow dish, mix flour, garlic powder, paprika, cayenne pepper, salt, and pepper. Remove chicken from buttermilk mixture, allowing excess to drip off. Dredge each chicken breast in the seasoned flour mixture, ensuring an even coating. In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add chicken breasts to the skillet, cooking for about 6-8 minutes per side, or until golden brown and cooked through. Transfer cooked chicken to a paper towel-lined plate to drain any excess oil. Serve each fried chicken breast atop a prepared buttermilk waffle and enjoy!
