#Repost @elizabeths_comment with @repostapp ・・・ 🌽 SWEET CORN SOUP (plant based) Serves 2 generously 20 min cooking preparation Recipe: 1,5 cups water 2 cups cooked sweet corn kernels 1 small chopped onion 1medium chopped carrot 1/2 cup chopped cabbage 2 tsp olive oil salt and pepper to taste corn starch (optional) Steam 2 cups of sweet corn kernels, then add 1,5 cup of them in a blender with the water. Reserve the other 1/2 cup of them for later. Grind to a smooth purée. Pass the purée through a grinder. Strained purée is ready for soup. Heat oil in a pan, add onion and cabbage, sauté for 2 minutes. Add the carrot and sauté for another 2 minutes. Do NOT overcook as we want the vegetables to be CRUNCHY! Now add the reserved 1/2 cup of of the sweet corn kernels with the strained purée. Bring it to a boil. If watery, add corn starch gradually until desired thickness. Taste with salt and pepper! Soup is ready. Enjoy! You may grate the vegetables instead of chopping them, it's what you prefer!
