Ingredients: 1 lb boneless, skinless chicken thighs, diced. 1 cup orzo pasta. 6 cups chicken broth. 4 cloves garlic, minced. 1 onion, diced. 2 carrots, sliced. 2 celery stalks, chopped. 1 lemon, juiced and zested. 1 tsp dried oregano. 1/2 tsp dried thyme. Salt and pepper to taste. 2 tbsp olive oil. Fresh parsley for garnish.
Instructions: In a large pot, heat olive oil over medium heat. Add diced chicken and cook until browned. Remove and set aside. In the same pot, saut garlic, onion, carrots, and celery until softened. Pour in chicken broth, lemon juice, and zest. Bring to a simmer. Add orzo, dried oregano, dried thyme, salt, and pepper. Cook until orzo is tender.
