A tasty and healthy curried quinoa salad with a mix of vegetables, raisins, and toasted almonds that is dressed in a sour curry dressing.
Ingredients: 1 cup quinoa, rinsed. 2 cups water. 1 cup cherry tomatoes, halved. 1 cucumber, diced. 1/2 red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup raisins. 1/4 cup sliced almonds, toasted. Dressing:. 3 tablespoons olive oil. 1 tablespoon apple cider vinegar. 1 teaspoon curry powder. 1/2 teaspoon ground cumin. Salt and pepper to taste.
Instructions: Put the quinoa and water in a medium-sized saucepan. Once it starts to boil, lower the heat, cover, and let it cook for 15 minutes, or until all the water is gone. Take it off the heat and let it cool down. Put cherry tomatoes, cucumber, red onion, cilantro, raisins, and toasted almonds in a large bowl. The quinoa should be cool before adding them. Olive oil, apple cider vinegar, curry powder, cumin, salt, and pepper should all be mixed together in a small bowl through a whisk. Mix the quinoa and vegetables together, then add the dressing and toss everything together. Put it in the fridge for at least 30 minutes before you serve it so the flavors can mix. If you want, you can serve it cold and top it with extra cilantro and almonds.
