Tender chicken breasts cooked in a Hawaiian-style sauce with pineapple, brown sugar, and soy sauce. The sauce was slowly cooked to perfection in a slow cooker. This dish is packed full of flavor and goes great with steamed rice.
Ingredients: 4 boneless, skinless chicken breasts. 1 cup pineapple juice. 1/2 cup brown sugar. 1/3 cup soy sauce. 1/4 cup honey. 3 cloves garlic, minced. 1 teaspoon ginger, minced. 1/4 teaspoon black pepper. 2 tablespoons cornstarch. 2 tablespoons water. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 1 onion, sliced. Sesame seeds, for garnish. Green onions, chopped, for garnish.
Instructions: Place chicken breasts in the slow cooker. In a bowl, mix pineapple juice, brown sugar, soy sauce, honey, garlic, ginger, and black pepper. Pour over chicken. Cover and cook on low for 4-5 hours or until chicken is cooked through and tender. In a small bowl, mix cornstarch and water to create a slurry. Stir into the slow cooker, along with sliced bell peppers and onion. Cook on high for an additional 30 minutes, or until sauce thickens. Serve chicken over rice, garnished with sesame seeds and chopped green onions.
