Spaghetti Squash Baked Feta Pasta (via Eating Bird Food)
Food experiments and new recipes......
I enjoy cooking but some nights it’s a chore. On those nights Instead of ordering in I often just throw food together and hope for the best. Sometimes it works and hubby says make that again, other times it is decent but a failure for him. Recently I tried this combination due to some leftovers and boy was it tasty. Verdict was to make it again so that’s whats for supper tonight.
Take A fairly good size spaghetti squash - stick it with a knife and cook in microwave for 20 min. Once cooked scrape it out completely into a casserole dish.
Add a couple of cooked shredded chicken breasts or in my case a bunch of left over chicken.
Stir in either a can of plain tomatoe sauce (something like Rague) or in my case I keep homemade marinara sauce in my freezer (you likely need at least a cup)
Take the contents of 1 box of low sodium stove top stuffing that has been left to soak in 3/4 cup water and spread across the mixture above.
Sprinkle mozzarella cheese over whole top and bake at 350 until brown on top and bubbling.
You won’t believe the flavours, textures and how filling a small portion is. It’s fairly healthy and if you use your own marinara and the low sodium stovetop quite low in salt. Calorie content would depend on how much cheese you choose to use and if it is full fat or low fat.
Thought I’d share as many people just don’t know what to do with spaghetti squash.

Como disfrutaba comer arroz con leche, caliente o frío. Una vez probé prepar con coliflor y no me convenció.
