Ingredients: 1 and 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/2 cup unsalted butter, softened. 2 large eggs. 1/2 cup whole milk. 1 tsp vanilla extract. 1/2 cup white chocolate chips. 1/2 cup dried cranberries. 1/4 cup sparkling cranberry juice. 1 tsp baking powder. 1/2 tsp salt. 1/4 cup powdered sugar for frosting. 2 tbsp sparkling cranberry juice for frosting. Sparkling sugar for decoration.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. Melt the butter and mix it with the sugar in a bowl until the mixture is light and fluffy. One at a time, add the eggs and beat well after each one. Add the vanilla extract and mix well. Mix the flour, baking powder, and salt together in a different bowl. Start with the dry ingredients and work your way up to the wet ones, adding the milk in between each addition. After adding the white chocolate chips and dried cranberries, mix them in slowly with a wooden spoon. Then add 1/4 cup of sparkling cranberry juice. Fill each cupcake liner about two thirds of the way to the top with batter. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. First, let the cupcakes cool in the pan for a few minutes. Then, move them to a wire rack to cool completely. Pour 2 tablespoons of sparkling cranberry juice into a small bowl and mix the powdered sugar with a whisk. This will make the frosting. Spread frosting over each cupcake once it's completely cool, and then sprinkle with colored sugar for a fun look. These cranberry white chocolate cupcakes are ready to be served and enjoyed!
