Ingredients: 1 whole chicken, spatchcocked. 2 tablespoons olive oil. 2 teaspoons paprika. 1 teaspoon cayenne pepper. 1 teaspoon garlic powder. 1 teaspoon onion powder. Salt and black pepper to taste. 4 carrots, peeled and chopped. 2 bell peppers, sliced. 1 red onion, sliced. 1 lemon, sliced. Fresh parsley for garnish.
Instructions: Preheat oven to 425F 220C. In a small bowl, mix together olive oil, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Place spatchcocked chicken on a baking sheet lined with parchment paper. Rub the spice mixture all over the chicken, ensuring it's evenly coated. Arrange chopped carrots, bell peppers, red onion, and lemon slices around the chicken on the baking sheet. Roast in the preheated oven for 45-50 minutes or until the chicken is golden brown and cooked through, and vegetables are tender. Once done, remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
