Ingredients: 1 cup flour. 1 tsp baking soda. 1/2 tsp ground ginger. 1/2 tsp ground cinnamon. 1/4 tsp ground cloves. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1/3 cup granulated sugar. 1/3 cup brown sugar, packed. 1 egg. 1/4 cup molasses. 1/2 tsp vanilla extract. 1/3 cup crystallized ginger, finely chopped. 1/3 cup turbinado sugar, for rolling.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Mix the baking soda, salt, ground ginger, ground cinnamon, ground cloves, and ground cinnamon together in a bowl with a whisk. Melt the butter and mix it with the white sugar and brown sugar in a different large bowl until the mixture is light and fluffy. After the egg is added, the molasses and vanilla extract should be mixed in. Mix everything together well. Slowly add the dry ingredients to the wet ones and mix them in until they are just combined. Add the chopped crystallized ginger and mix it in. In a small bowl, put the turbinado sugar. Scoop out cookie dough about the size of a tablespoon and roll it into balls. Cover each dough ball with turbinado sugar by rolling it in it. Don't crowd the baking sheet when you put the dough balls on it; leave some space between each one. Put it in an oven that has already been heated for 10 to 12 minutes, or until the edges are set but the middle is still a little soft. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way.
