If you want to make a tasty Dutch holiday treat in the air fryer, try Gevulde Speculaas van Sint, a spiced almond-filled pastry that's great for Saint Nicholas' Day.
Ingredients: 250g almond paste. 250g all-purpose flour. 150g cold butter, cubed. 125g brown sugar. 2 eggs. 1 tsp baking powder. 1 tsp ground cinnamon. 1/2 tsp ground cloves. 1/2 tsp ground nutmeg. 1/4 tsp salt. 1 egg yolk for brushing. Sliced almonds for topping.
Instructions: Put the flour, brown sugar, cold butter, and a pinch of salt in a bowl. As you mix, the mixture will start to look like coarse breadcrumbs. Mix in one egg and keep going until a dough forms. Cut the dough in half and then wrap each half in plastic wrap. Put it in the fridge for 30 minutes. Get your air fryer ready by heating it up to 325F 160C. Add the almond paste, ground cinnamon, ground cloves, ground nutmeg, and one egg to a different bowl. Mix them together. You should make a rectangle out of one piece of dough and put it in the bottom of your air fryer basket. Spread the almond paste mix out over the dough in the basket so that it covers it all. Spread the second piece of dough out and put it on top of the almond paste. To seal the dough, press the edges together. Spread the egg yolk over the top and then add the sliced almonds. For 20 to 25 minutes, or until the speculaas is golden brown and cooked all the way through, put the basket in the air fryer. Take it out of the air fryer, let it cool down, and then cut it into squares or rectangles. Have fun with your Gevulde Speculaas van Sint!
