This spicy tofu stir fry is a flavorful and satisfying dish that's perfect for a quick and healthy weeknight dinner. The tofu is crispy on the outside and tender on the inside, while the vegetables add color, texture, and nutrients. The spicy sauce adds a kick of flavor that will leave you wanting more.
Ingredients: 1 block tofu, pressed and cubed. 2 tablespoons soy sauce. 1 tablespoon sriracha sauce. 1 tablespoon sesame oil. 1 tablespoon rice vinegar. 1 tablespoon honey. 2 cloves garlic, minced. 1 teaspoon ginger, minced. 1 bell pepper, sliced. 1 onion, sliced. 2 cups mixed vegetables such as broccoli, carrots, snap peas. 2 tablespoons vegetable oil. Salt and pepper to taste. Cooked rice, for serving. Sesame seeds and sliced green onions, for garnish.
Instructions: In a small bowl, mix together soy sauce, sriracha sauce, sesame oil, rice vinegar, honey, garlic, and ginger to make the sauce. Heat vegetable oil in a large skillet over medium-high heat. Add tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from skillet and set aside. In the same skillet, add a little more oil if needed. Add bell pepper, onion, and mixed vegetables to the skillet. Stir fry until vegetables are tender-crisp, about 5-7 minutes. Return tofu to the skillet and pour the sauce over the tofu and vegetables. Stir well to coat everything evenly and cook for another 2-3 minutes until heated through. Season with salt and pepper to taste. Serve hot over cooked rice, garnished with sesame seeds and sliced green onions.
