Ingredients: 2 boneless, skinless chicken breasts, thinly sliced. 2 tablespoons vegetable oil. 1/2 cup soy sauce. 1/4 cup brown sugar. 2 cloves garlic, minced. 1 teaspoon ginger, grated. 1 red bell pepper, thinly sliced. 1 green bell pepper, thinly sliced. 1 cup broccoli florets. 1 cup snap peas. 1 carrot, julienned. 2 cups cooked rice. Green onions, for garnish. Sesame seeds, for garnish.
Instructions: In a small bowl, whisk together soy sauce, brown sugar, garlic, and ginger to make the sauce. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add sliced chicken and stir-fry until cooked through and caramelized, about 5-7 minutes. Remove from skillet and set aside. In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the bell peppers, broccoli, snap peas, and julienned carrot. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp. Return the cooked chicken to the skillet and pour the sauce over the chicken and vegetables. Stir-fry for an additional 2-3 minutes until everything is heated through and coated with the sauce. Serve the caramelized chicken and vegetable stir fry over cooked rice. Garnish with sliced green onions and sesame seeds. Enjoy!
