Ingredients: 1 cup quinoa, rinsed. 4 cups vegetable broth. 2 cups spinach, chopped. 1 cup kale, chopped. 1 onion, diced. 3 cloves garlic, minced. 1 zucchini, diced. 1 tablespoon olive oil. 1 teaspoon cumin. 1 teaspoon coriander. Salt and pepper to taste. Juice of 1 lemon.
Instructions: In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, saut until translucent. Stir in quinoa, cumin, and coriander, toasting for 2 minutes. Pour in vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes. Add chopped spinach, kale, and zucchini, simmer for an additional 10 minutes. Season with salt and pepper to taste. Finish with a squeeze of fresh lemon juice. Serve hot and enjoy!
