These strawberry rhubarb ginger crumb bars taste great because they are sweet, sour, and slightly spicy from the ginger. Great for a picnic or a cozy night in at home, these treats are perfect for any event.
Ingredients: 1 cup diced strawberries. 1 cup diced rhubarb. 2 tablespoons minced ginger. 2 cups all-purpose flour. 1 cup brown sugar. 1 teaspoon baking powder. 1/2 teaspoon salt. 1/2 cup unsalted butter, cold and diced. 1 egg. 1 teaspoon vanilla extract.
Instructions: Warm the oven up to 350F 175C and grease a 9x9-inch baking pan. Put the diced strawberries, rhubarb, and minced ginger in a bowl and mix them together. Put the flour, brown sugar, baking powder, and salt in a different bowl and mix them together. To make the crumbly mixture, cut the cold, diced butter into it. Mix the egg and vanilla extract in a small bowl. Mix the dry ingredients with the egg mixture that has been beaten until everything is well mixed. Put half of the crumbs into the bottom of the baking pan that has been prepared. The strawberry rhubarb ginger filling should be spread out evenly on top of the crumb base. Break up the rest of the crumbs and sprinkle them on top of the filling. After the oven is hot, bake for 40 to 45 minutes, or until the top is golden brown. Let it cool all the way down before cutting it into bars.
