A flavorful and nutritious vegan dish featuring rice infused with garlic, thyme, oregano, and fresh spinach.
Ingredients: 1 cup rice. 2 cups vegetable broth. 2 cups fresh spinach, chopped. 2 cloves garlic, minced. 1 tablespoon olive oil. 1 teaspoon dried thyme. 1 teaspoon dried oregano. Salt and pepper to taste.
Instructions: In a medium saucepan, heat olive oil over medium heat. Add minced garlic and saut until fragrant. Stir in rice and cook for 1-2 minutes, until lightly toasted. Add vegetable broth, thyme, oregano, salt, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed. Once rice is cooked, stir in chopped spinach and cover for 5 minutes to allow spinach to wilt. Fluff rice with a fork and serve hot.
