This quick and easy vegan recipe for corn and spinach toast tastes great and is great for a healthy breakfast or light meal. With lots of flavor and good for you nutrients, it will please your taste buds and keep you going all day.
Ingredients: 2 slices whole grain bread. 1/2 cup corn kernels fresh or frozen. 1 cup fresh spinach, chopped. 1/4 cup diced tomatoes. 2 tablespoons nutritional yeast. 1/4 teaspoon garlic powder. Salt and pepper to taste.
Instructions: Preheat the oven to 350F 175C. In a bowl, mix together the corn kernels, chopped spinach, diced tomatoes, nutritional yeast, garlic powder, salt, and pepper. Toast the slices of bread until slightly crispy. Spread the corn and spinach mixture evenly on top of each toasted bread slice. Place the topped bread slices on a baking sheet and bake in the preheated oven for 8-10 minutes, or until the toppings are heated through. Once done, remove from the oven and serve hot.
